Each café is a gallery room: start with its miniature, then look at the photos on the wall. Every exhibit links back to a chapter — what you see in the café, the course explains why it is that way.

Process Coffee
Wentao community · Tongren Street · Opened 2024
A small spot under the trees of Tongren Street, with ginkgos, a park and the riverside cherry-blossom path nearby. Neighbours run into old friends here and children become friends over a leaf-collage homework. The open space has become everyone’s living room. Clean processing, careful making, enjoying the process.
A three-storey café in Toyama: the café on the ground floor, with a roastery behind glass and a double-height atrium; a library and co-working on the first floor, where the gallery looks down on the bar; five guest rooms on the top floor, around a glass-roofed courtyard. Come for coffee, books and work by day, stay the night, and the first cup is one flight down.
Rooms open only after the café gives written permission: no names, logos or photos before that.

Once a café agrees, its room is built from the floor plan and photos it provides.

How to visit a room
01Look at the miniatureAn architectural model built from the floor plan; drag to turn it. Pick an exhibit and the camera flies to where its photo was taken, then the real photo fades in.
02Read the exhibits and photosEach exhibit has a label — what it is and why the owner chose it — and photos from the café.
03Back to the courseUnder each label is the chapter that explains it: after the grinder, read Chapter 20 on why grind size matters.
