Knowledge Graph

Thirty-three canonical concepts and the causal relations between them. Every edition draws from here.

Café OS has exactly one body of knowledge. Every concept has a stable id; chapters, 3D scenes and real labs reference that id instead of restating it.

Concepts relate in six ways: causes, affects, depends on, measured by, contrasts with and precedes. The table lists each concept's direct upstream and downstream.

Origin

IDConceptAffected byAffects
CAF-ORIGIN-COFFEE-PLANT-001Coffee Plant

Coffee is an evergreen flowering plant; what ends up in the cup comes from its seed.

Climate—
CAF-ORIGIN-SPECIES-001Species

Arabica and Canephora (Robusta) are different species; genetics shape both flavor and growing needs.

—Coffee Cherry
CAF-ORIGIN-VARIETY-001Variety

Varieties and cultivars are genetic distinctions within a species.

—Coffee Cherry
CAF-ORIGIN-ORIGIN-001Origin

Country, region, farm and microclimate, together with human farming decisions.

—Climate
CAF-ORIGIN-CLIMATE-001Climate

Temperature, rainfall and seasons decide whether coffee grows, and when it flowers and ripens.

Elevation、OriginCoffee Plant、Coffee Cherry
CAF-ORIGIN-ELEVATION-001Elevation

Elevation acts mainly through temperature, changing how fast the fruit ripens.

—Climate
CAF-ORIGIN-CHERRY-001Coffee Cherry

The fruit of the coffee plant: skin, pulp and mucilage around (usually) two seeds.

Species、Variety、Climate—
CAF-ORIGIN-HARVEST-001Harvest

Selective picking versus mechanical harvest is ultimately about how well ripeness is controlled.

—Green Coffee

Processing

IDConceptAffected byAffects
CAF-PROC-PROCESSING-001Processing

The steps that separate the seed from the fruit and dry it: washed, natural, honey and hybrids.

—Fermentation
CAF-PROC-FERMENTATION-001Fermentation

Microbial activity during processing; it can be controlled, or it can go wrong.

ProcessingGreen Coffee
CAF-PROC-DRYING-001Drying

Bringing moisture down to a storable level; speed and evenness both matter.

—Green Coffee
CAF-PROC-GREEN-COFFEE-001Green Coffee

Dried, hulled and sorted seed awaiting roast; moisture, defects and storage decide its stability.

Harvest、Fermentation、Drying—

Roasting

IDConceptAffected byAffects
CAF-ROAST-ROASTING-001Roasting

A heat-driven transformation — drying, browning, gas, first crack, development — that changes flavor and solubility.

Heat InputExtraction、Sensory Perception
CAF-ROAST-HEAT-001Heat Input

How fast and how much heat reaches the beans during roasting, which sets when each stage arrives.

—Roasting
CAF-ROAST-FRESHNESS-001Freshness

Roast date, CO₂ degassing, resting and staling, and how air, heat, light and moisture affect storage.

—Flow & Resistance

Grinding

IDConceptAffected byAffects
CAF-GRIND-GRINDING-001Grinding

Turning beans into particles to expose surface area to water.

—Particle Size Distribution
CAF-GRIND-PARTICLE-SIZE-001Particle Size Distribution

"Grind size" is not one particle size but a distribution: fines, a main peak and boulders.

GrindingFlow & Resistance、Extraction

Water

IDConceptAffected byAffects
CAF-WATER-WATER-001Brewing Water

Water is not neutral: minerals, hardness and alkalinity change extraction and taste.

—Extraction

Brewing

IDConceptAffected byAffects
CAF-BREW-DOSE-001Dose

How many grams of coffee you use. It sets the ratio and also how deep the bed (or puck) is.

—Flow & Resistance
CAF-BREW-RATIO-001Brew Ratio

Coffee dose relative to water; it mainly sets the strength of the cup.

—Strength、Extraction
CAF-BREW-TEMPERATURE-001Temperature

Hotter water dissolves coffee faster.

—Extraction
CAF-BREW-TIME-001Time

How long water and coffee are in contact. In percolation, time is often a result of grind and flow rather than an independent dial.

Flow & ResistanceExtraction
CAF-BREW-AGITATION-001Agitation

Stirring, pour impact and swirling that bring water and particles into fuller contact.

—Flow & Resistance、Extraction
CAF-BREW-FLOW-001Flow & Resistance

How fast water moves through the bed, set by particle size, bed structure and pressure; method-dependent.

Freshness、Particle Size Distribution、Agitation、Dose、PressureTime、Extraction
CAF-BREW-EXTRACTION-001Extraction

How much — and which — soluble material water takes from coffee: under-, over- and uneven extraction.

Roasting、Particle Size Distribution、Flow & Resistance、Brewing Water、Temperature、Time、Agitation、Brew RatioStrength、Sensory Perception
CAF-BREW-STRENGTH-001Strength

The concentration of dissolved coffee in the cup — not the same thing as extraction.

Brew Ratio、ExtractionSensory Perception
CAF-BREW-IMMERSION-001Immersion

Coffee steeps in all of the water for a time, then is separated.

——
CAF-BREW-PERCOLATION-001Percolation

Water flows through a bed of coffee, fresh water continually carrying solubles away.

——

Espresso & Milk

IDConceptAffected byAffects
CAF-ESPR-ESPRESSO-001Espresso

High-concentration percolation under pressure through a compact puck: dose, yield, pressure, time.

——
CAF-ESPR-PRESSURE-001Pressure

An espresso machine pumps water through a compact puck; pressure drives the flow and the puck resists it.

—Flow & Resistance
CAF-ESPR-MILK-001Milk & Texture

Protein, fat, steam and temperature together decide the texture of microfoam.

—Sensory Perception

Sensory

IDConceptAffected byAffects
CAF-SENS-SENSORY-001Sensory Perception

Aroma, acidity, sweetness, bitterness, body and aftertaste — perception first, vocabulary second.

Roasting、Extraction、Strength、Milk & Texture—
CAF-SENS-PREFERENCE-001Preference

Liking a cup and judging its quality are two different questions.

——

The graph records direction, not magnitude. "Finer grind → faster extraction" is a direction; "how much finer, how much faster" belongs to the simulation models and is labelled as an approximation.
